Name: Honey nut brown ale

6 pounds amber malt extract
2 pounds Clover Honey
1/2 pound crystal malt (20L)
1/4 pound chocolate malt
1/2 pound dark brown sugar
1.75 ounces Perle hops (bittering)
1/2 ounce Willamette hops(flavoring)
1/2 tsp. Irish Moss
1 package British Ale Yeast
3/4 cup corn sugar for priming

Procedure: Steep grains until wort begins to boil. Remove grains. Add amber extract, honey, brown sugar and Perle hops. Boil for 1 hour. Add Willamette hops in last 15 minutes of boil. Add Irish Moss in last 5 minutes of boil. Cool wort, and pitch yeast. Primary for 7 to 10 days, secondary for 7 to 10 days. Age in bottle 2 to 3 weeks, with best results after 2 months.

Name: HONEY LAGER

3.3 pounds extra light malt extract
½ pound amber DME
¼ pound malted wheat
¼ pound crystal malt (40L)
12 ounces Sue Bee Clover Honey
1 ounce Cascade hops (bittering)
.25 ounces Hallertauer (aroma)
½ tsp. Irish Moss
1 package American Lager Yeast
¾ cup corn sugar for priming

Procedure: Steep grains until wort begins to boil. Remove grains. Add malt extracts, honey and Cascade hops. Boil for 1 hour. Add Hallertauer hops and Irish Moss in last 5 minutes of boil. Cool wort, and pitch yeast. Primary for 7 to 10 days at 50 to 55 degrees. Secondary for 3 to 4 weeks at 40 to 45 degrees. Age in bottle 2 to 3 weeks.

3 pounds light malt extract
3 pounds dark DME
3 pounds Natural Honey
1 pound crystal malt
½ pound chocolate malt
½ pound torrefied wheat
¼ pound roasted barley
1 ounce Perle hops (bittering)
½ ounce Fuggles (flavoring)
½ ounce Fuggles (aroma)
½ tsp. Irish Moss
1 package Irish Ale Yeast
¾ cup corn sugar for priming

Procedure: Steep grains until wort begins to boil. Remove grains. Add malt extracts, honey and Perle hops. Boil for 1 hour. Add ½ ounce Fuggles hops after 30 minutes. Add ½ ounce Fuggles hops and Irish Moss in last 5 minutes of boil. Cool wort, and pitch yeast. Primary for 7 days. Secondary for at least 10 days and up to 4 weeks. Age in bottle 2 to 3 weeks. Longer aging will improve the beer.
